Start with the sides first and then start with the top of the cake, slowly working from the outside edge and moving towards the center. One can use long and smooth strokes by clearing off the spatula after each stoke. This technique works best when you have a thin consistency icing and one can attain perfection with patience and practice.

The Water Smoothing Method

There are two different ways to use the water smoothing method. In the first method, frost the cake and pre smooth it, using a spatula. Then dip the spatula in hot water and hold it in an angle so that only one side skims the icing’s surface. Just make sure not to over wet the icing as it may cause the icing to streak. One can also use a spray bottle to wet the icing and then use the spatula to skim the same. One needs to clear the spatula after every stroke.
